1 (8-oz.) pkg. cream cheese
1 (3-oz.) pkg orange Jello
1 tsp. lemon juice
12 lg. marshmallows
1 c. hot water
1 c. cold water
3-4 med. carrots, grated
1 med. can crushed pineapple, drained
1/2 c. walnuts, chopped
8 oz. Cool Whip
Dissolve marshmallows in hot water. Pour over cream cheese, Jello and lemon juice. Blend in mixer until cheese is dissolved. Add cold water and mix; chill until almost solid. Add grated carrots, crushed pineapple, nuts, and Cool Whip. To fill a 9 x 13-inch pan to the top, double this recipe.
